MEDITERRANEAN EGG QUESADILLA This is a super simple recipe for breakfast? brunch? lunch? really any #healthymeal you want🍽 𝐢𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 🌱 2 eggs A couple cherry tomatoes Handful fresh basil 40g light mozzarella 2 low calorie tortilla 𝐝𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬 📌 •beat together eggs and add salt/pepper to taste •scramble in a pan over medium low heat, stirring until soft •layer 1/4 the cheese on half of each tortilla •add scrambled eggs and basil •slice cherry tomatoes thinly and layer •top with remaining cheese and tortilla fold over •place in nonstick pan over medium high heat and press down with something heavy •cook in each side for ~1-2mins until crispy 𝐧𝐮𝐭𝐫𝐢𝐭𝐢𝐨𝐧𝐚𝐥 𝐢𝐧𝐟𝐨 ✨ 385 cals (for both ) 30 P 27 C 17 F #breakfastquesadilla #healthybreakfastideas #healthybreakfastrecipes #quesadilla

Pesto chicken and dauphinoise potatoes🐔🥔 ⁣ ⁣ I didn’t want to waste the rest of the cream I bought for my carbonara last night and then I was scrolling on the @courtneyblackapp last night and saw this recipe for daulphonoise potatoes 😍 anyone else can’t spell dauphinoise or is that just me!?😂⁣ ⁣ • So for the chicken I literally just covered it in some sun-dried tomato pesto (this one was from Aldi, 45 calories per tbsp ) and then 5g of pesto (25 calories ), wrapped in tinfoil and baked in the oven for 20 mins, then I opened the tinfoil and baked for 10 mins more to crisp up!🐔🍅⁣ ⁣ • For the potatoes I thinly sliced a large potato (around 200g, so they were like 1cm thick ) and then boiled these slices for 3 minutes, be careful as they do break easily!!🥔 Then when they were cooking I made the sauce which was 50ml of @elmlea_ukie cream, 1/2 a tsp of @verylazyfooduk garlic, a pinch of nutmeg, and 30ml of semi skimmed milk🧄🥛 I drained the potatoes and then mixed them with the creamy mixture, layered it all into a small baking dish and cook for about 30 mins in the oven. Chorizo carbonara 🍝⁣ Back again with the creamy pasta🤣 obsesseddddd is the word!! They do this in zizi and its delish so thought I’d recreate😍 I’ve used cream in the recipe which I used to never use cream or anything in meals like this but it adds soooo much flavour and isn’t even very high in calories if you get the single one so don’t be afraid to use it!🤩 ⁣⁣ • First I boiled some spaghetti (I had 90g today which I weigh dry and then boil ) and whilst this was cooking, in a bowl I mixed 50ml of @elmlea_ukie single cream (only 70 calories! ), 5g of plain flour, 5g of Parmesan and 25g of @philadelphia_uki lightest until it was a smooth consistency🧀 • I thinly sliced an onion, some mushrooms, chorizo (I had 20g for 70 calories, from aldi ) & 2 bacon medallions and fried them in a pan with some garlic & @spicentice Italian seasoning until browned and then I added the sauce I made to the pan- kept stirring so it doesn’t burn and also I lowered the heat a bit!🥓🧄🧅 🌿Then I added the cooked-drained pasta in with a bit of pasta water to loosen & stirred until all combed and thats it, so easy! ⁣ ⁣⁣ • I had it with some broccoli and a cheesy garlic bread slice (95 calories- from Lidl )🥦🥖 which came to 697 calories total and 30g of protein! Can you tell I’m obsessed with Pesto at the minute 😍👌🏽 it’s so easy to use, it tastes great with any vegetables, pasta and meats, I love it 🥰. No matter what you read online, do not be scared of carbs! The media has given carbs such a bad name and it’s a shame because we all know they taste amazing! Think about it... 1g of carb = 4 calories 1g of protein = 4 calories So why are we so scared of carbs and not protein? (1g of fat = 9 calories! ) Ingredients for pictures: 🍅 50g pasta (weigh before cooked ) 🍅 30g of sun-dried tomato pesto 🍅 170g BBQ Chicken (mine is a pre packed/seasoned pack from @aldi ) 🍅 50g sweet red pepper 🍅 60g cucumber 🍅 Handful of lettuce I cook my pasta whilst chopping up the other ingredients. When the pasta is drained, put it back in the pan and add in your pesto and peppers. Leave that to heat up whilst you heat up your chicken in the microwave.
